Thomas Roose has returned to Milwaukee after leaving his position as Senior Executive Chef at the Chateau Hotel and Convention Center of Bloomington, IL. Prior to his recruitment at the Chateau, he held similar positions at a variety of hotels, resorts, and fine dining establishments which included The Olympia Resort and Conference Center, Oconomowoc; The Wyndham Center and Steven Wade Café, Milwaukee; The Inn at Stone Mountain, Atlanta, GA; Miramar Beach and Tennis Club, Ristoranti Ciao, and The Ritz Carlton, Naples, to name a few.

In 1987, Roose completed his apprenticeship program in the culinary arts at the Ritz Carlton in Naples, Florida. Under the guiding sponsorship of CMC Jean Pierre Dousant, Roose was introduced to a wide array of multi-regional cuisines and classical preparations. Chef Roose is known for “thinking outside of the box.” He is an incredible culinary artist and will elegantly and tastefully fulfill the expectations of any size wedding or event. Roose has been written up in various publications and newspapers and has received standing ovations from clients at numerous events.
